Plump, juicy raisins tucked into a spiced, silky filling inside a flaky crust — pure vintage comfort!
🍇 Ingredients
- 2 cups raisins
- 2 cups water
- ¾ cup granulated sugar
- 2 tablespoons cornstarch
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon apple cider vinegar (or lemon juice)
- 2 tablespoons unsalted butter
- 1 package pie crust (for a double crust, homemade or store-bought)
🍇 Instructions
1️⃣ Preheat the oven:
Preheat your oven to 200°C (400°F).
Line a 9-inch pie plate with one of the crusts.
2️⃣ Cook the raisins:
In a saucepan, simmer the raisins in water over medium heat for about 10 minutes, until plump.
3️⃣ Make the filling:
In a small bowl, mix sugar, cornstarch, salt, cinnamon, and nutmeg.
Stir the dry mixture into the simmering raisins.
Cook, stirring constantly, until the mixture thickens (about 3–5 minutes).
4️⃣ Finish the filling:
Remove from heat. Stir in the vinegar and butter until smooth and glossy.
5️⃣ Assemble the pie:
Pour the raisin filling into the prepared pie shell.
Top with the second crust. Seal and crimp the edges, then cut small slits on top for steam to escape.
6️⃣ Bake:
Bake for 30–35 minutes, or until the crust is golden brown and the filling is bubbling.
7️⃣ Cool and serve:
Let cool completely to allow the filling to set.
Slice and enjoy plain or with a dollop of whipped cream! 🥰
