1️⃣ Preheat oven to 400°F (200°C).
2️⃣ In an oven-safe skillet, melt butter over medium heat. Sauté onion and garlic until soft, about 4–5 minutes.
3️⃣ Stir in chicken and mixed vegetables. Sprinkle in the flour, stir, and cook for 1–2 minutes to thicken.
4️⃣ Slowly whisk in chicken broth and milk. Cook, stirring, until it becomes a creamy filling (about 5–7 minutes). Season with salt, pepper, and thyme.
5️⃣ Remove from heat. Lay puff pastry over the top (or arrange biscuit dough), tucking edges if needed. Brush with egg wash for golden color (optional).
