Peel potatoes and grate using the coarse side of a box grater. Place in a clean kitchen towel and squeeze out as much liquid as possible. The drier the better for crispy pancakes!

In a large bowl, mix the grated potatoes, grated onion, eggs, flour, salt, and pepper. Stir until fully combined. The mixture should hold together but not be too wet.

Heat about 1/4 inch of oil in a skillet over medium-high heat until hot (around 350ยฐF / 175ยฐC).

Scoop about 1/4 cup of mixture per pancake into the pan. Flatten gently with a spatula. Fry 2โ3 minutes per side or until deep golden brown and crisp.

Place cooked pancakes on paper towels to drain excess oil. Serve immediately with applesauce or sour cream.
