🀠 Cowboy Cookies – Big, Bold & Packed with Flavor!

These Cowboy Cookies are hearty and full of everything you love β€” oats, chocolate chips, coconut, and pecans β€” all rolled into one thick, chewy, bakery-style cookie. They’re tough enough for the trail… but perfect with a glass of milk at home!

🧈 1 cup (2 sticks) unsalted butter, softened
🍬 1 cup light brown sugar, packed
🍬 1/2 cup granulated sugar

1️⃣ Preheat Oven:
Preheat to 350Β°F (175Β°C). Line 2 baking sheets with parchment paper.

2️⃣ Cream the Butter & Sugars:
In a large bowl, beat butter, brown sugar, and granulated sugar until creamy and smooth (about 2 minutes).

3️⃣ Add Eggs & Vanilla:
Mix in eggs one at a time, then stir in vanilla.

4️⃣ Combine Dry Ingredients:
In a separate bowl, whisk flour, baking soda, baking powder, and salt. Gradually add to wet mixture until just combined.

5️⃣ Stir in Mix-Ins:
Fold in oats, chocolate chips, coconut, and pecans until evenly distributed.

6️⃣ Scoop & Bake:
Drop large heaping tablespoons of dough onto baking sheets, spaced 2″ apart. Bake for 12–14 minutes or until golden around the edges.

7️⃣ Cool:
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
