This Mexican Casserole is the perfect family-friendly dinner โ€” layers of spiced beef, beans, salsa, and melty cheese baked to golden perfection. Itโ€™s quick to prep, satisfying to eat, and even better the next day!

๐Ÿ… 1 cup salsa
๐ŸŒฝ 1 cup corn kernels (canned or frozen)
๐Ÿซ“ 6 small flour tortillas or crushed tortilla chips
๐Ÿง€ 2 cups shredded Mexican blend cheese

In a skillet over medium heat, cook ground beef and onion until browned. Drain fat, then stir in taco seasoning, salsa, beans, and corn. Simmer for 5 minutes.

2๏ธโƒฃ Layer the Casserole:
In a greased 9×13″ baking dish, layer half the tortillas or chips, half the meat mixture, and 1 cup of cheese. Repeat with remaining layers.

3๏ธโƒฃ Bake:
Preheat oven to 375ยฐF (190ยฐC). Cover loosely with foil and bake for 15 minutes. Remove foil and bake 10 more minutes, or until cheese is bubbly and golden.

4๏ธโƒฃ Serve:
Let rest 5 minutes. Garnish with cilantro, jalapeรฑos, and a dollop of sour cream if desired.
