Flaky cod fillets in a luscious, zesty lemon butter sauce — ready in just minutes!
🐟 Ingredients
For the cod:
- 4 cod fillets (about 5–6 oz each)
- ½ cup all-purpose flour (for dusting)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
For the lemon butter sauce:
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- ¼ cup fresh lemon juice (about 1 large lemon)
- 1 teaspoon lemon zest
- 2 tablespoons fresh parsley, chopped
🐟 Instructions
1️⃣ Prepare the cod:
Pat the cod fillets dry with paper towels.
Season both sides with salt and pepper.
Lightly dredge the fillets in flour, shaking off the excess.
2️⃣ Pan-fry the cod:
Heat the olive oil and butter in a large skillet over medium-high heat.
Once hot, add the cod fillets.
Cook for 3–4 minutes per side, until golden and cooked through (fish should flake easily with a fork).
Transfer the cod to a plate and keep warm.
3️⃣ Make the lemon butter sauce:
In the same skillet, lower the heat to medium.
Add the butter and let it melt.
Stir in the garlic and cook until fragrant, about 30 seconds.
Add the lemon juice and lemon zest, scraping up any browned bits from the bottom of the pan.
4️⃣ Finish and serve:
Spoon the lemon butter sauce over the cod fillets.
Sprinkle with fresh parsley and serve immediately with extra lemon wedges!
