- 2 cups chopped cooked broccoli (fresh or frozen, well drained)
- 1 ½ cups shredded cheddar cheese
- ½ cup breadcrumbs (plus a little extra if needed)
- ¼ cup grated Parmesan cheese
- 2 large eggs
- 2 tablespoons all-purpose flour
- 2 tablespoons chopped green onions (optional)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
🥦 Instructions
1️⃣ Preheat the oven:
Preheat your oven to 200°C (400°F).
Line a baking sheet with parchment paper or lightly grease it.
2️⃣ Make the mixture:
In a large bowl, combine the broccoli, cheddar cheese, Parmesan, breadcrumbs, flour, eggs, green onions, and all the seasonings.
Mix until everything is evenly combined.
(If the mixture feels too wet, add a bit more breadcrumbs.)
3️⃣ Form the balls:
Scoop about 1 heaping tablespoon of the mixture and roll into balls.
Place them onto the prepared baking sheet.
4️⃣ Bake:
Bake for 20–25 minutes, flipping halfway through, until golden brown and slightly crispy.
5️⃣ Serve:
Serve warm with your favorite dipping sauce like ranch, honey mustard, or sriracha mayo! 🥰
