✨ Apple Cinnamon Muffins ✨

Tender muffins packed with juicy apples and warm cinnamon — your new fall (or anytime!) favorite!


🍎 Ingredients

For the muffins:

  • 1 ¾ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • ⅓ cup vegetable oil (or melted butter)
  • 2 large eggs
  • ½ cup milk (or buttermilk)
  • 1 teaspoon vanilla extract
  • 1 ½ cups peeled and diced apples (about 1–2 apples)

For the cinnamon sugar topping:

  • 2 tablespoons granulated sugar
  • ½ teaspoon ground cinnamon

🍎 Instructions

1️⃣ Preheat the oven:
Preheat your oven to 190°C (375°F).
Line a muffin tin with paper liners or lightly grease.

2️⃣ Mix dry ingredients:
In a large bowl, whisk together flour, sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

3️⃣ Mix wet ingredients:
In another bowl, whisk together oil, eggs, milk, and vanilla extract until smooth.

4️⃣ Combine:
Pour the wet ingredients into the dry ingredients and stir gently until just combined — do not overmix!
Fold in the diced apples.

5️⃣ Fill the muffin tin:
Divide the batter evenly between the muffin cups, filling each about ¾ full.

6️⃣ Add topping:
Mix the cinnamon sugar topping ingredients together and sprinkle generously over each muffin.

7️⃣ Bake:
Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.

8️⃣ Cool and serve:
Let cool for a few minutes, then enjoy warm — they are divine with a little butter! 🧈
