✨ Easy Old-Fashioned Rice Pudding ✨

A creamy, sweet hug in every spoonful – simple, comforting, and timeless!


🍚 Ingredients

  • ¾ cup uncooked white rice (short or medium grain preferred)
  • 1 ½ cups water
  • 2 cups whole milk (plus a little more if needed)
  • ⅓ cup granulated sugar
  • ¼ teaspoon salt
  • 1 egg, beaten
  • ½ cup whole milk (extra, for the end)
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional, for topping)
  • Raisins (optional, about ½ cup)

🍚 Instructions

1️⃣ Cook the rice:
In a medium saucepan, bring the water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15–18 minutes or until the water is absorbed and the rice is tender.

2️⃣ Make it creamy:
Stir in 2 cups of milk, sugar, and salt.
Cook uncovered over medium heat, stirring often, until thick and creamy — about 15–20 minutes.

3️⃣ Add richness:
In a small bowl, beat the egg with the extra ½ cup milk.
Slowly stir a few spoonfuls of the hot rice mixture into the egg to temper it, then gradually stir the egg mixture back into the pudding.

4️⃣ Final cooking:
Cook for 2 more minutes, stirring constantly, but do not boil.
Remove from heat and stir in the vanilla extract (and raisins if using).

5️⃣ Serve and sprinkle:
Spoon into bowls and sprinkle with cinnamon if you like.
