✨ Chicken Pot Pie Pasta ✨

All the cozy flavors of chicken pot pie, wrapped up in a creamy, dreamy pasta dish!


🍗 Ingredients

  • 8 oz (225g) short pasta (like penne, rotini, or bowties)
  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded or cubed
  • 1 ½ cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme (optional for extra flavor)
  • ½ cup grated Parmesan cheese
  • Fresh parsley, for garnish (optional)

🍗 Instructions

1️⃣ Cook the pasta:
Bring a large pot of salted water to a boil.
Cook the pasta according to package directions until al dente, then drain and set aside.

2️⃣ Sauté the aromatics:
In a large skillet, melt the butter over medium heat.
Add the onion and garlic and sauté until soft and fragrant, about 3–4 minutes.

3️⃣ Build the sauce:
Stir in the cream of chicken soup and milk.
Season with salt, pepper, and thyme.
Simmer for 2–3 minutes, stirring gently, until creamy.

4️⃣ Add the good stuff:
Stir in the chicken and frozen vegetables.
Simmer for another 5–7 minutes, until everything is heated through.

5️⃣ Combine:
Add the drained pasta to the skillet and toss everything together until well coated.
Stir in the Parmesan cheese for an extra layer of richness.

6️⃣ Serve:
Garnish with fresh parsley if you like, and serve hot!
