✨ Crockpot Pepper Steak ✨

Juicy beef, sweet peppers, and a savory sauce — slow-cooked to perfection!


🥩 Ingredients

  • 2 pounds beef sirloin or top round, sliced into strips
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 2 green bell peppers, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • ½ cup beef broth
  • 1 teaspoon black pepper
  • Cooked rice, for serving
  • Green onions, chopped, for garnish (optional)

🥩 Instructions

1️⃣ Sear the beef (optional but flavorful!):
In a skillet, heat olive oil over medium-high heat.
Quickly sear the beef strips until just browned (no need to cook through).
Transfer the beef to your crockpot.

2️⃣ Build the flavor:
Top the beef with onions, bell peppers, and garlic.

3️⃣ Make the sauce:
In a bowl, mix together the diced tomatoes, soy sauce, brown sugar, and black pepper.
Pour over the beef and veggies.

4️⃣ Slow cook:
Cover and cook on Low for 5–6 hours or High for 3 hours, until the beef is tender and juicy.

5️⃣ Thicken the sauce:
In a small bowl, whisk cornstarch with a splash of cold water.
Stir into the crockpot during the last 30 minutes of cooking to thicken the sauce.

6️⃣ Serve:
Serve hot over a bed of steamed rice and sprinkle with chopped green onions if you like! 🥰
