🀠 Cowboy Meatloaf & Potato Casserole – All Beef, All Flavor!

A layered casserole of juicy meatloaf, creamy potatoes, and bubbling cheese. Perfect for feeding your hungry crew!

⭐ Ingredients:

For the Meatloaf Layer:

  • 2 lbs ground beef
  • 1 cup breadcrumbs or crushed Ritz crackers
  • 2 eggs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup BBQ sauce or ketchup (optional, for extra flavor)

For the Potato Layer:

  • 3 cups mashed potatoes (fresh or leftover)
  • 1/4 cup sour cream
  • 1/4 cup milk
  • Salt & pepper to taste

Topping:

  • 1 1/2 cups shredded cheddar or Colby Jack cheese
  • 2 tbsp chopped chives or green onions (optional)

1️⃣ Preheat Oven:
Preheat oven to 375Β°F (190Β°C). Lightly grease a 9Γ—13″ baking dish.

2️⃣ Make the Meatloaf Base:
In a large bowl, mix together ground beef, breadcrumbs, eggs, milk, onion, and seasonings.
Spread the meat mixture evenly into the bottom of the prepared baking dish.
Optional: spread BBQ sauce or ketchup over the top of the meat layer for added flavor.

3️⃣ Bake the Meat Layer:
Bake for 25–30 minutes, until mostly cooked through and juices run clear.
Remove from oven and carefully drain excess fat if needed.

4️⃣ Prep the Potato Layer:
While the meatloaf bakes, mix your mashed potatoes with sour cream, milk, and seasoning.
Spread the potato mixture evenly over the cooked meatloaf.

5️⃣ Add the Cheese:
Sprinkle shredded cheese over the mashed potatoes.

6️⃣ Final Bake:
Return to oven and bake an additional 15–20 minutes, until the cheese is bubbly and golden.
Let sit for 10 minutes before slicing.
